Tasting notes :
深紫紅色，有矮灌木、黑色漿果、甜美櫻桃的香氣；入口酒體濃郁飽滿，除了黑色系列果香外，隱約還有木桶的香氣，單寧強勁細緻，餘韻悠長。非常適合搭配燒烤或佐有醬汁的肉類料理。

The 2007 Minervois Estibals is a blend of separately-vinified Syrah, Carignan, and Grenache from a single, chalk-clay vineyard. Scents of black raspberry, rosemary, and wood smoke lead to a luscious, quite viscous amalgam of bitter-sweet black chocolate, cassis, and seedy black raspberries that saturates the palate without losing its primary juiciness. This finishes with an almost aggressively bracing freshness and tart refreshment; salinity; and tactile tenacity that one doesn’t encounter often in the Languedoc. How might it evolve when it settles down? I-m not sure I want it to, quite honestly: this wine’s sheer spunk and audacious brightness (despite 14.5% labeled alcohol) is a large part of its attraction. But no doubt at least 3-4 years of interesting and delicious evolution can be assumed. And given the price of the 2006, we can assume that this will represent outstanding value.
