Philippe Pacalet 於2001年以本名創立酒廠 ,他是已故自然派釀酒大師Marcel Lapierre的外甥,師承自然派葡萄酒宗師,據傳聞DRC曾經邀請其接任釀酒師,但是Phlippe卻辭退了眾人夢寐以求的機會,選擇獨自創業,希望透過自己的品牌貫徹釀酒理念。

Philippe Pacalet 創業前已有豐富的釀酒經驗,曾於Leroy學習釀酒,後來擔任Domaine Prieure Roch的釀酒師與葡萄園管理工作一直到1999年。Philippe Pacalet目前的莊園都是承租來的,依照 Philippe的規範以有機方式嚴謹的栽培,Philippe精心挑選葡萄園位於遍布金丘大小產區 在Beaune, Pommard, Gevrey-Chambertin, Chambolle-Musigny和Nuits Saint Georges都有葡萄園。
2014’ BH Score: 91-93 /Tasted: Apr 15, 2016 /Drink: 2026+ / Issue: 62 Note: from Clos St. Denis and Les Treux Tasting note: This is notably spicier with a pure, elegant, airy and again restrained nose that presents notes of red currant, earth, violet and exotic tea scents. There is a lovely sense of purity to the energetic and lightly mineral-laden middle weight plus flavors that possess a highly seductive and refined mouth feel as the supporting tannins are beautifully well-integrated on the well-balanced finish. This is a classically styled Ech that is somewhat classier than the Clos de Vougeot and what I particularly like here is the lovely combination of muscle and refinement.
